Recently I posted about what seems to be the source of occasional call dropping with the 3G's that have bothered people across the country. Supposedly Apple will provide a software update to some third-party firmware to fix the problem. In the meantime I have 3G turned off unless I need it at a particular moment. This also helps battery life somewhat as well -- particularly if you're using email "Push" (more costly) instead of "Fetch".
To turn off 3G,
1. Go to Settings app
2. Select General
3. Select Network
4. Set "Enable 3G" to OFF
If I'm out somewhere I use wireless if available, EDGE if sufficient, and 3G as a last resort.

Agreed, I only turn 3G on when I'm surfing. The only hitch is that turning 3G on is followed by a maddeningly long period of waiting in "no service" until the 3G service kicks in. Takes some of the spontaneity out of the Web.
I know man. Amazing how long 5-10 seconds can be.
